No Peek Beef Tips

I came across this recipe on Pinterest and thought it sounded warm and comforting on a chilly day. Today was a great day to try this, since we had nothing to do, and it takes 3 hours in the oven!
Here's what you'll need



 2 lb of stew meat or beef tips
1 packet of brown gravy mix
1 packet of onion soup mix
1 can of cream of potato soup
1 cup water

Preheat your oven to 300*
Begin by placing the beef in a 9x13 pan. Mine was still frozen, but it was fine. 

 
Dump the gravy mix, soup mix, soup and water into a bowl.


Mix well to combine.


Pour the mixture over the beef.

Cover it tightly with foil and pop it in the oven for 3 hours.

After 3 hours, take it out of the oven and remove the foil. Be careful, it will be super steamy.

Serve over mashed potatoes, rice or noodles. YUM!

Day 162: Taco Meat For Chauncey Ball League

Day 162.

It was my turn to make taco meat for the ball team. They use this for tacos in a boat. You could do the same, or just feed a crowd!

Here's what you'll need.

4 lbs. ground beef
2 packages taco seasoning
2 small onions
2 jars taco sauce

Begin by browning the hamburger with the taco seasoning.

Dice up the onions and throw them in too.

Cook until no longer pink. Drain well.

Add it all back to the pan.

Pour in the taco sauce.
Stir and simmer for 20 minutes.

At the park, tacos in a boat are made with corn chips, meat, shredded cheese, salsa and sour cream. Yummo!

Day 154: Lasagna Toss

Day 154.

I love to whip this up when we're wanting lasagna, but are short on time.

Here's what you'll need.

1 lb. hamburger
1 26 oz jar pasta sauce
2 cloves garlic
1 2/3 cups water
1/4 cup Italian salad dressing
1 box oven ready lasagna noodles
1 cup shredded mozzarella cheese

Brown and drain the hamburger.

Add the hamburger back to the pan and stir in the garlic, pasta sauce, water, and dressing. Bring to a boil.

While you're waiting for the stuff in the pan to boil, break the noodles up into small pieces.

Add noodles to the pan.

Give it a stir.

Reduce heat to a simmer, place a lid on it, and simmer for 10 to 15 minutes or until noodles are tender.

Once the noodles are tender, remove the lid.

Sprinkle the cheese over the top, and put the lid back on to let the cheese melt.

Once the cheese is melted, serve.

Day 151: Chauncey Ball League Coney

Day 151.

I made this to take to Amelia's first baseball game. Parents take turns making coney, nacho cheese and taco meat for the concession stand to sell. Tonight was my turn for coney. If you're not from around here, you may not realize what coney is. Basically, it's the sauce you would use on a "chili" dog, only around here it's called coney. You can get just a coney or a coney dog. Coney is just the sauce in a bun. Coney dog is coney in a bun, with a hot dog.

Here's what you need. (Keep in mind this makes a TON. If you're making it for home use, quarter the recipe)

4 lbs. hamburger
2 small onions
64 ounces ketchup
4 tablespoons brown sugar
5 teaspoons chili powder
1 teaspoon garlic salt

Begin by browning the hamburger.

Once it's browned, drain the grease.

Dice up your onions.

Add the onions and hamburger back to the pan.

Dump in the spices.

Photobucket
Add in the ketchup and give it a good stir.

Simmer 20 minutes. Serve with or without a dog. :)

Day 131: Taquitos

Day 131.

We love taquitos, so I was really thrilled to find a recipe for home made ones!

Here's what you do.

Cook a 2 1/2 lb. beef roast with some garlic and cumin and 1/2 cup water in the crockpot until meat is tender.

Shred the beef. I did this the day before.

When it comes to assembly, you'll need

The beef
2/3 cups salsa
1 cup shredded cheddar cheese
24 corn tortillas

Combine the beef, salsa and cheese in a large bowl.

Slightly dampen some paper towels and place on a plate. Lightly sprinkle water on the tortillas, and sit them on the damp towels. Cover with some more damp paper towels.

Microwave for about 45 seconds, or until pliable.

Lay out one tortilla, and top with 1/4 cup beef mixture.

Roll up. Repeat with all tortillas.

These can be frozen now and baked later, or baked now.

Heat oven to 400*.

Bake for 10 minutes, or until crispy.

Some of these split open, I think I had them rolled too tight, but it didn't affect the flavor at all.

Day 126: Meatball Subs

Day 126.

This is one of our favorite go-to meals. It's super quick to make, and really filling.

Here's what you'll need.

Hoagie buns (1 per person)
A bag of frozen meatballs
Spaghetti sauce
Garlic salt
Basil

Begin by splitting the buns.

Dump the spaghetti sauce in a pan. Season with garlic salt and basil.

Defrost the meatballs according to package directions.

Stir into the sauce.

Meanwhile, give the buns a little toast under the broiler. It helps keep the bread from getting soggy.

Fill the buns with meatballs, sauce, and cheese if desired. Toast again to melt the cheese.

Day 113: Beef Kebabs and Veggie Kebabs

Day 113.

Whoops. I didn't get this one up last night. Sorry about that. I had an Uppercase Living party, and some friends stayed and chatted until about 2am. By then, I was ready for bed!

But here it is.

Here's what you'll need for the beef.

1 lb. beef stew meat
about 2 tablespoons Worchestershire sauce
1 teaspoon seasoned salt

Place the beef in a bowl, sprinkle with seasoned salt and pour worchestershire sauce over the top.

Toss to coat. Refrigerate at least 30 minutes or overnight.

These were the veggies I used. Mushrooms, green peppers, red onions and cherry tomatoes. I just tossed these with a little bit of black pepper and sea salt.

Thread onto skewers which have been soaked.

Do the same with the beef.
Grill until desired doneness.

Grill the veggie skewers until crisp-tender.
