Day 164: Pepperoni Pizza Puffs

Day 164.

These were pretty tasty, and relatively quick to make. They would be nice to whip up to eat on the way to the ballpark, which was our plan. ;)

Here's what you'll need.

3/4 cup flour
3/4 teaspoon baking powder
3/4 cup milk
1 egg
1 cup shredded mozzarella cheese
about 1 cup pepperoni
Basil
Pizza sauce, for serving

Preheat oven to 375*

In a medium bowl, whisk together the flour and baking powder.

In a small bowl, beat the egg.

Stir in the egg and milk.

Stir in the cheese.

Stir until well combined.

Photobucket
Dice the pepperoni into small cubes.

Add those to the bowl.

Sprinkle in some basil.

Stir well, and set aside for 10 minutes.

Meanwhile, grease a mini muffin pan.

Place batter into pan.

Photobucket
Bake at 375 for 20-25 minutes, until puffed and golden.

Serve with pizza sauce for dipping.

In making these again, I would add some garlic as I found them kind of bland.

Vegetarians, sub in chopped peppers for pepperoni.

Day 150: English Muffin Pizzas

Day 150.

I remember making these as a kid, so Amelia and I make them somewhat often. :)

Here's what you'll need.

1 English muffin for each person
Tomato sauce or Pizza sauce
Toppings of choice (pepperoni)
Shredded mozzarella cheese

Preheat oven to 350*

Split each muffin in half.

Place on a foil lined baking sheet.

Spread sauce on each half.

Photobucket
Top as desired.

Sprinkle with cheese. We put on a little bit of basil too.

Bake at 350 for about 10 minutes, or until bottoms are toasty and cheese is melted.

Day 95: Garlic Lovers Pizza Crust

Day 95.

Hmm. You think we like garlic around here? Garlic is actually very beneficial to your health, especially cardiovascular. It is also helps to prevent many types of cancers and promotes optimal health. And it tastes soooo good. :)

Here's what you'll need for this crust.

6 fluid ounces lukewarm water
2 tablespoons olive oil
3 garlic cloves, minced
2 cups bread flour
1 teaspoon sugar
1/2 teaspoon salt
2 teaspoons active dry yeast

Place the water, oil and garlic cloves into your bread machine pan.

Add the flour, sugar and salt.

Make a small well, and add the yeast to that.

Set your machine to the Dough cycle.

Once the machine signals the end of the cycle. Place the dough onto a floured surface. Knead into a tight ball. Let it rest on the counter for about 15 minutes.

Preheat your oven to 400*. Stretch the dough to fit a pizza pan, and top with sauce and toppings.

Remember this stuff? Mozzarella pearls. Love 'em.

Add your cheese of choice.

Bake for 10 to 20 minutes in the preheated oven, until the crust is lightly browned on the bottom.

Day 78: Grilled Margherita Pizza

Day 78.

Yum. Pizza. On the grill! Amazing! Tonight was another meatless meal because it's Friday. You know what? None of us missed having meat on this super awesome pizza. It was flavorful, with a crunchy crust and velvety smooth cheese.

Here's what you'll need.

1 prebaked pizza crust. I got mine from the deli section at Walmart.
Pizza sauce (I like the squeezy bottle because this doesn't use much)
Fresh mozzarella (pearls would work nicely here as well)
Basil (Fresh would be better, but I have none. So dried it is)
Olive oil

Go ahead and preheat your grill. You want a nice heat to char up the crust.

Open up your mozzarella

And slice it. You seriously want to have everything ready to go when you start cooking this. It goes really fast. You'll want to slice it pretty thin so it doesn't take long to melt.

Pour some olive oil onto the crust.

Place the crust, oil side down, on a nice, hot grill.

Coat the other side of the crust with oil.

Once it looks nice and charred, flip the crust over.

Top with pizza sauce. Really, how much you use is up to you. Some like more sauce than others, just eyeball it.

Shake a nice sprinkling of basil over the sauce.

Lay out the mozzarella slices on the top as well.

Turn the heat to low, and shut the lid until cheese is melty. Sprinkle with more basil if desired.

There. Grilled pizza. I'm so excited that spring is here!!!

Day 29: Bubble Pizza

Day 29.
This recipe is for my friend, Megan and her son Parker. Megan cut my hair today, and we were discussing my blog. I mentioned that I was blogging about bubble pizza tonight, and Megan was uber-excited! So, Megan and Parker, this one's for you guys!!! Millie is having her VERY FIRST SLEEPOVER tonight, so I thought this one would be fun for the girls. They really liked it!

Here's what you need.

2 cans of biscuits
1 jar pizza sauce
Toppings of your choice
1 package mozzarella cheese

Pop open your can of biscuits.

Separate out the biscuits.

Cut the biscuits in half.

Then in half again, cutting each biscuit into 4 pieces.

After cutting both cans of biscuits, lay them in a single layer in a 9X13 pan.

Spoon about half a jar of pizza sauce onto the biscuits. Don't saturate the biscuits totally.

For ours tonight, we used ham.

And pepperoni.

Pop it into a preheated 400* oven for 15-20 minutes. After 15-20 minutes, top the pizza with cheese. Bake for about 5 minutes more, or until the cheese is all melted.
