Day 143: Black and White Chip Cookies

Day 143.

I whipped these up the other night when Millie had a couple of friends over to watch a movie. You can leave out the white chips and have some awesome chocolate chip cookies, but I had white chips on hand so I figured I'd go ahead and throw 'em in.

Here's what you'll need.

2 1/4 cups flour
1 teaspoon baking soda
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 tablespoon vanilla extract
2 eggs
2 cups chocolate chips

AND

About a cup of white chocolate chips

Preheat oven to 375.

Combine butter, vanilla, sugar and brown sugar in a mixing bowl. Beat well.

In another bowl, combine flour and baking soda.

Add eggs to butter and sugar mixture and beat well again.

Add the flour mixture to the butter mixture. Whoops. Guess I didn't get a picture of that.

Portion out dough onto cookie sheets. Bake at 375 for 9-11 minutes.

Cool completely.

Day 134: Yummy Sugar Cookies

Day 134.

These cookies are delish! They're not too sweet, and really buttery.

Here's what you'll need.

1 cup of butter, softened
1 1/2 cups sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons butter flavored extract
3 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt

Combine butter and sugar in a mixing bowl. Cream together.

Add eggs and extracts. Mix well.

Stir together flour, baking powder and salt. Add to batter and mix well.

Place dough onto plastic wrap.

Wrap dough tightly, and chill for at least 2 hours. Mine chilled overnight and was fine.

When you're ready to bake, preheat oven to 350*.

Place the dough between two sheets of waxed paper to roll out. Roll dough to about 1/4 inch thick and place on baking sheets.

Bake at 350* for 8-11 minutes. Let cool and decorate as desired.

Day 68: Oatmeal Cookies

Day 68.

This is the dessert that I took to the family from yesterday's post.

I love these cookies because they're just the right amount of sweetness and spice and they're good and chewy. Yum

Here's what you'll need.

3/4C. shortening
1C. brown sugar
1/2C. white sugar
1 egg
1/4C. water
1 tsp. vanilla
1C. flour
1/2 tsp. baking soda
1 tbsp. cinnamon
3C. rolled oats

Preheat oven to 350*

In mixer bowl, combing shortening and sugars.

Add in the egg, water and vanilla. Mix well.

Combine the four, baking soda and cinnamon. Add to the mixer and mix to combine.

Add oats to the mixer. Mix until just incorporated.

Swat your assistant's hand outta the way.

Use a cookie scoop to portion dough. Bake in preheated oven for about 12 minutes.

Mmmm! Cool on baking sheets for a few minutes before removing to wire racks to cool completely.

Day 53: Chewy Cashew Cookies

Day 53.

OMG! These cookies are AMAZING. Seriously.
Make them. You'll thank me. I promise. :)

Here's what you need.

1 1/4 cups brown sugar
1/2 cup butter
1 egg
1/2 cup chopped cashews
1/4 tsp. baking soda
1/8 tsp. salt
1 1/4 cup flour

Preheat oven to 350.

Combine the butter, sugar and egg in a mixing bowl. Mix until well combined.

Add the baking soda, salt and flour.

Mix well.

Add the cashews.

Photobucket
Mix until just incorporated.

Use a cookie scoop to portion out dough. Bake for about 12 minutes. You'll want to pull them out when they're just barely done. The dough will spread as it cooks, but it makes the edges crispy and the middle nice and soft.

Day 51: Banana-Berry Oatmeal Cookies

Day 51.

These are the cookies that I "invented" this week. I took a couple of different recipe and mashed them together and tweaked some other bits, then Ta-Da!

Here's what you'll need for these.

1 1/2 cups flour
1/2 tsp. baking soda
1 tsp. cinnamon
3/4 cup shortening
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 cup mashed bananas (about 2 bananas)
1 3/4 cup quick cooking oats
1/2 cup blueberries

Preheat oven to 400*

Combine the flour, baking soda and cinnamon.

Add the shortening and both sugars to a mixing bowl.

Cream together.

Add the egg to the mixing bowl,

along with the bananas and oatmeal.

Mix well.

Add the blueberries

and fold in gently.

Use a cookie scoop to portion out dough.

Bake for about 10 minutes. Cool on a wire rack.

We all really enjoyed these cookies. They stayed super soft, even after they were stored overnight. MMmmm!
