Day 163: Bread Machine Sticky Buns

Day 163.

Have I mentioned how much I love my bread machine? Cause I do. A lot. I use it all the time. Now that I've found this recipe? It's gonna get used even more!

Here's what you'll need.
(Bear with me. This has 3 parts...)

1 1/4 cups milk
1 teaspoon vanilla
3 tablespoons butter
3 cups all purpose flour
3 tablespoons sugar
1 1/4 teaspoons salt
2 teaspoons yeast

Place the milk, butter and vanilla in bread machine pan.

Add 3 cups flour.

Then the sugar, salt and yeast.

Set machine to Dough setting.

Part 2 - The Filling

3/4 cup brown sugar
6 tablespoons butter - at room temp.
1 tablespoon cinnamon

I thought it might be easier if the filling were all mixed together, so I dumped all the ingredients into my mixer, fitted with the dough hook attachment.

Part 3 - The Sticky.

1 cup brown sugar
1/4 cup corn syrup
1/3 cup butter

Add all this to a saucepan.

Cook until smooth.

Spray a 9x13 pan well with non stick spray.

Pour the caramel into the bottom of the pan.

Sprinkle 1/2 cup chopped pecans over the caramel, if desired. Set pan aside.

Once dough cycle is complete. Turn the dough out onto a lightly floured surface. Roll into a 12" by 15" rectangle.

Spread the filling over the dough, leaving about 1 inch all the way around the dough.

Begin rolling up the dough, jelly roll style.

Pinch the seams to seal.

Begin cutting the dough into 1 1/2" sections.

Place the dough into the pan.

Cover tightly with plastic wrap, and place in refrigerator overnight
**Alternate directions below**

Remove rolls 20-30 minutes prior to baking.

Preheat oven to 350*

Bake for 20-30 minutes, or until lightly browned on top.

Here it can get a bit tricky. Place a cooling rack and another pan on top of the pan of rolls.

Flip, taking care not to burn yourself on hot caramel!

Remove the pan the rolls were baked in. ta-da!

Fantastic!

**Alternate Directions**
If you are making these the same day you want to eat them, simply let them rise at room temperature, covered, for about 45 minutes. Bake as directed.

I made these in the morning, then stuck them in the fridge. I put them into the cold oven, and let them sit in the oven through the preheating. They puffed up just fine this way too.

Day 142: Parmesan and Pepper Bread

Day 142.

I came across this recipe and thought it sounded interesting. It is.
It's somewhat spicy, but would make a really good bread for a hearty sandwich.

Here's what you'll need.

1 1/4 cups water
2 tablespoons sugar
1 tablespoon Italian seasoning
2 teaspoons garlic salt
2 teaspoons black pepper
2 teaspoons parsley
3 1/2 cups bread flour
1/3 cup Parmesan cheese
1 tablespoon yeast

Combine water, sugar, and spices in the pan of your bread machine.

Add flour.

Add Parmesan and yeast.

Secure pan in machine and set to 2 lb. loaf, white, light crust.

Once finished, cool on a wire rack before slicing.

Day 129: Garlic and Herb Parmesan Biscuits

Day 129.

I made these the other day, and they were pretty tasty! They fell a bit, so they weren't really fluffy, but it didn't change the taste at all!

Here's what you'll need.

1 1/4 cups water
1 tablespoon sugar
3/4 teaspoon garlic salt
2 teaspoons Italian seasoning
1/3 cup Parmesan cheese
3 cups bread flour
1 tablespoon yeast

Layer ingredients into bread machine pan.

Program to dough setting.

After cycle is completed, remove pan from machine.

Lightly oil a work surface.

Turn the dough out onto the work surface.

Cut into 8 pieces.

Form dough into balls, and place on a greased cookie sheet.

Let rise in a warm area until doubled.

Preheat oven to 400*

Next you'll need some water and garlic salt

Brush the biscuits with water and sprinkle on the garlic salt.

Bake at 400* for 15 minutes or until lightly browned.

Day 122: Jalapeno Garlic Bread

Day 122.

I made this bread to have as a side with chili. It was really good, and actually made pretty good sandwiches the next day.

Here's what you'll need for the bread.

1 cup milk, at room temperature
2 tablespoons butter, at room temperature
2 eggs
1 teaspoon salt
2 cups flour
1/4 cup sugar
2 1/4 teaspoons active dry yeast

Place milk, butter, eggs and salt into bread machine pan.

Add flour, sugar and yeast. Place in bread machine and set for dough.

Here's what you'll need for the filling.

1/2 cup seeded, diced jalapeno
8 garlic cloves, minced
5 teaspoons butter, at room temperature, Divided
3 tablespoons grated Parmesan cheese, Divided

In a small bowl, mix the chopped jalapeno and garlic cloves. Set aside.

When dough has finished processing in the bread machine, remove it to a lightly floured surface.

Divide it in half.

Roll dough into a 14 inch by 9 inch rectangle. (Roughly)

Spread with 1 1/2 teaspoons butter.

Sprinkle with half the cheese. I added some mozzarella because I didn't think it looked cheesy enough.

Spread on half of the jalapeno mixture.

Roll up jelly-roll style.

Place into a greased bread pan.

Repeat with the other half of the dough.

Cover and let rise until doubled, about 40 minutes.

After dough is doubled, preheat oven to 350.

Melt the remaining butter and pour over loaves. Sprinkle some additional cheese on top. I also sprinkled on some garlic salt.

Bake for 30 minutes, or until golden.
