Day 151: Chauncey Ball League Coney

Day 151.

I made this to take to Amelia's first baseball game. Parents take turns making coney, nacho cheese and taco meat for the concession stand to sell. Tonight was my turn for coney. If you're not from around here, you may not realize what coney is. Basically, it's the sauce you would use on a "chili" dog, only around here it's called coney. You can get just a coney or a coney dog. Coney is just the sauce in a bun. Coney dog is coney in a bun, with a hot dog.

Here's what you need. (Keep in mind this makes a TON. If you're making it for home use, quarter the recipe)

4 lbs. hamburger
2 small onions
64 ounces ketchup
4 tablespoons brown sugar
5 teaspoons chili powder
1 teaspoon garlic salt

Begin by browning the hamburger.

Once it's browned, drain the grease.

Dice up your onions.

Photobucket
Add the onions and hamburger back to the pan.

Dump in the spices.

Photobucket
Add in the ketchup and give it a good stir.

Simmer 20 minutes. Serve with or without a dog. :)

Day 126: Meatball Subs

Day 126.

This is one of our favorite go-to meals. It's super quick to make, and really filling.

Here's what you'll need.

Hoagie buns (1 per person)
A bag of frozen meatballs
Spaghetti sauce
Garlic salt
Basil

Begin by splitting the buns.

Dump the spaghetti sauce in a pan. Season with garlic salt and basil.

Defrost the meatballs according to package directions.

Stir into the sauce.

Meanwhile, give the buns a little toast under the broiler. It helps keep the bread from getting soggy.

Fill the buns with meatballs, sauce, and cheese if desired. Toast again to melt the cheese.

Day 111: Easy Recipe and a Giveaway!!!

Day 111.

I thought today would be a great day for a giveaway!!!
I knew I wanted to give some stuff away to you guys, my awesome readers, so I contacted the inventor of this product to ask if we could work something out. He graciously sent me two of these! One for me to try and review and one to give away!

Here's what it is.

It's called a Krustbuster. It cuts the crusts off of sandwiches and seals the edges. How cool is that???
It even comes with these cool "stamps" to impress the top of your sandwiches.

I chose the star.

Here's how it works.

Place one slice of bread on the buster.

Gently press to score the bread.

See?
This gives you a guide on where to stop with the fillings so it seals correctly.

Assemble your sandwich. I used peanut butter, strawberry jelly and sliced strawberries. (There's your recipe for the day :) )

Place the bread back on the buster.

Top with the second slice.

The crust then simply peels away.

So.
Now the review.

I really liked this. The stamps come in their own container, which is nice for storage purposes. Once I made a couple of sandwiches in this, it really got my mind rolling about what all could be made. Stuffed french toast, pizza pockets, even breakfast sandwiches!

Day 84: PB (&J) Packets

Day 84.

I came across this recipe and thought "How cool!" You can buy pre-made, frozen PB&J sandwiches, but it's close to $4 for a pack of 4! Making them this way is considerably cheaper. The can of biscuits were .98 for 8 and we had peanut butter on hand. I made up a batch of these then flash froze them on a pan. Once they were frozen, I put them into a zip top bag and stuck it in the freezer. When I need one of these for Millie's school lunch, I just pull one out of the freezer and pack it in her lunchbox. It should defrost in time for lunch! How awesome is that! You can add jelly to these if you wish, but Millie doesn't like jelly. You could also add honey. Or put honey or jelly on the side for dipping. :)

Here's what you'll need.

1 (16 oz) can jumbo biscuits
Peanut butter

Preheat your oven to 350*

Separate the dough into 8 biscuits. Take one biscuit and flatten into a round (5-6 inches)

Add a tablespoon of peanut butter and smear it around. Add a teaspoon of jelly too, if that's your thing.

Fold in half, and using a fork, crimp the edges shut.

Place on baking sheet. Repeat with remaining biscuits.

Bake for about 15 minutes, or until golden.

Now, for a modification.
As you can see, some of these packets popped open a bit. In the future, I'll seal the edges with an egg wash and then crimp them shut. That should keep them closed. It wasn't really that big of a deal, because they cooked well, and are still shut most of the way. But it's a small change. :)

Day 81: Honey Oat Bread

Day 81.

I finally invested in a new bread machine, as mine was dying. It wouldn't mix properly, and jumped all over the counter as it tried. I'm hoping to get back into the routine of making our own bread. This recipe is pretty tasty, and is good for sandwiches.

Here's what you'll need.

1 cup water
1 tbsp. vegetable oil
1/4 cup honey
1 tsp. salt
1/2 cup oats
2 cups bread flour
1 tsp. active dry yeast

Add the water, oil, honey and salt to bread machine pan.

Add the oats,

then the bread flour.

Make a small well in the flour, and add the yeast. Be sure the yeast doesn't come into contact with any liquid.

Set the machine to light or medium crust color.
Let the machine do its magic.

Day 71: Black Bean Burgers

Day 71.

My cousin, Courtney, sent me this recipe to try. I figured I'd pull it out to use during Lent, when we don't eat meat on Fridays. So I made them tonight.

Here's what you'll need.

1 15 oz. can black beans
1/2 cup breadcrumbs
1/3 cup tomato sauce
1 1/2 tsp. cumin
1 tsp. garlic salt
1/2 tsp. pepper
2 Tbsp. cilantro

Preheat oven to 400*

Drain and rinse the beans. Place into a medium bowl.

Using a potato masher or fork, smash the beans.

Add the breadcrumbs, sauce and spices.

Combine, using a fork.

Form into 4 patties, and place on a greased baking sheet.

Bake at 400* for 15 minutes.

Day 62: Bacon Cheeseburger Rollup

Day 62.

This is one of Kurt's favorites. :)

Here's what you'll need.

1 lb. ground beef
1 can cheddar cheese soup
2 tablespoons crumbled bacon
1/2 teaspoon pepper
1/2 teaspoon garlic salt
1 refrigerated pizza crust

Preheat oven to 400*

Brown and drain the ground beef.

Stir in the cheddar cheese soup, pepper, garlic salt and bacon.

Once it's combined, set it aside for just a few minutes to cool off.

Unroll the crust and spoon the mixture into the upper half of the crust.

Roll up the crust.

Bake for 20-25 minutes, until golden brown. Slice into pieces to serve.
