Day 173: 5 Minute Microwave Granola

Day 173.

I love granola, but it can be a bit pricey to buy at the grocery. I was super excited to come across this recipe because it has common ingredients and it quick to make.

Here's what you'll need.

2 cups oats
2/3 cup chopped nuts (any kind)
1/4 cup brown sugar
1/4 cup honey
1 tsp. vanilla

Place oats into the bottom of a greased 9x13 glass pan.

Add the nuts. I used walnuts and pecans.

Crumble the brown sugar over the top.

Drizzle the honey and vanilla over the mixture.

Stir well. Cook for 2.5 minutes.

Stir and cook for another 2.5 minutes.

Let it cool.

Stir well to crumble, and store in an airtight container.

Day 150: English Muffin Pizzas

Day 150.

I remember making these as a kid, so Amelia and I make them somewhat often. :)

Here's what you'll need.

1 English muffin for each person
Tomato sauce or Pizza sauce
Toppings of choice (pepperoni)
Shredded mozzarella cheese

Preheat oven to 350*

Split each muffin in half.

Place on a foil lined baking sheet.

Spread sauce on each half.

Top as desired.

Sprinkle with cheese. We put on a little bit of basil too.

Bake at 350 for about 10 minutes, or until bottoms are toasty and cheese is melted.

Day 146: Cheesy Bacon Fries

Day 146.

These are a favorite of ours. Sometimes we'll have them as an appetizer-y supper, other times as a snack. But they're always good!

Here's what you'll need.

a bag of frozen fries
shredded cheese
precooked bacon
dried chives

Cook fries according to package directions.

Place fries on plate.

Cover with the cheese...

then the bacon...

and the chives.

Microwave until the cheese is melted. Then dig in!

Day 138: Cinnamon Sugar Popcorn

Day 138.

We eat a lot of popcorn around here. I have an air popper, so it's fairly healthy. It's also cheap! We get bored with regular old popcorn, so I thought I'd mix it up for Millie. Needless to say, she loved it.

Here's what you'll need.

Popped popcorn, preferably air popped
Melted butter
Cinnamon-sugar

Simply pour butter over popcorn.

Shake on some cinnamon-sugar.

Stir to combine.

Day 116: Garlic and Herb Snack Crackers

Day 116.

My grandma Thacker used to make these all the time, so every time I make these, I think of her. :)

Here's what you'll need.

1 package oyster crackers
1 packet garlic and herb dressing mix
1/2 cup oil

Place crackers into a gallon sized zip top bag.

Photobucket
Add seasoning mix.

Photobucket
Pour oil over the top.

Photobucket
Shake to distribute.

Photobucket
Pour onto a cookie sheet to dry.

When they're dry, serve!
