Blargh! It has been insane around here! Between graduations, visiting relatives, trips out of town, going to visit friends, and taking our exchange student to catch her plane home, I've barely been home to cook! Boo! I'm hoping to get caught up by tomorrow night, so let's dive right on in!
The other night, Kurt wanted baked potatoes but I didn't want to bake them in the oven because it was about 9,000 degrees in the house. This was our solution.
Lay out some scrubbed potatoes on a sheet of foil.
Season them with salt and pepper. Place about a tablespoon of butter in the foil as well.
Bunch the foil up around the potatoes and drop in an ice cube.
Seal it up completely. Like this. :)
Place on a preheated grill, and cook until tender, about 25 minutes.
Ta-da!
