Day 60: Maple Glazed Pecan Carrots

Day 60.

Normally, I don't like cooked carrots. They're mushy, bitter and gross. But these. These are awesome.

Here's what you'll need

5 or 6 carrots
1/4 cup pecan pieces
2 tablespoons butter
2 tablespoons maple syrup

Peel and dice the carrots.

Boil the carrots until just fork tender.

Drain well.

Melt the butter in the saucepan.

Add the carrots back into the pan, then add the maple syrup.

Add in the pecan pieces.

Stir well and serve.

That looks fantastic! My favorite carrots are very similar. I use butter, brown sugar, and ginger. Yours would have more crunch. They look great.
