Day 70: Crispy Skinned Baked Potatoes

Day 70.

Alright. This is an easy one, but it's super yummy. I love when baked potatoes have a crispy, well seasoned skin. We Ginders usually leave the skin on potatoes:
1. Because there are lots of vitamins in the skin
and 2. Because I'm lazy, and don't want to peel them. :)
Maybe a little more of #2, with #1 just being a bonus.

Here's what you'll need.

Some potatoes
Olive oil
Garlic salt
Sea salt
Pepper

Preheat your oven to 400*

Give the tatoes a good scrubbing

Pierce the skin of each potato with a fork. This way they won't explode in your oven. Potato explosions cannot be good.

Pour a couple tablespoons worth of olive oil onto a small plate.

Season the oil with garlic salt, sea salt and pepper. A couple shakes of each is good.

Roll each potato around in the oil/spice mixture.

Place potatoes directly on oven rack. It's a good idea to put a cookie sheet under them, so you don't get any oil dripping down onto the oven. Let these puppies cook for about 45 minutes, turning halfway through.

There ya go. Sometimes we'll just cook up some potatoes for supper, and top them with cheese and bacon pieces. MMmm. Bacon...
